Monday Meals: Curried Butternut Squash Soup

Happy 2015 Cool Dads readers! We hope you had a wonderful holiday season with your families and friends- full of holiday cheer, and of course delicious food! 
After a crazy holiday season we're back with some new, delicious recipes for you. First up: a vegetarian dish that might be helpful after a weekend of over-indulging. This has become one of our favorite weeknight meals because it's easy to make, it's delicious and it only has a handful of ingredients- most of which we usually have in our cupboard. This is a great recipe idea if you're looking to implement Meatless Monday in 2015.

Curried Butternut Squash Soup

1 butternut squash
1 cup coconut milk
1 teaspoon red curry paste
1 cup vegetable broth
salt to taste


Preheat oven to 400 degrees. Place whole squash on baking tray and bake for an hour or until a knife pokes through skin easily. Remove from oven and let cool. 


Cut in half lengthwise and scoop out seeds; then scoop out flesh into a blender or food processor. Add coconut milk, red curry paste and broth. Blend until smooth; season to taste with salt. Pour into a saucepan to warm up before serving.
